For years I was that girl that wouldn't let any of her food touch. Then I met my husband, who eats everything together in a bowl. After many years I too have come to enjoy lots of delicious things piled together in a bowl.
This breakfast bowl has become a staple in our house. It can be made ahead of time and heated up multiple times and is still just as delicious.
Here's what you will need for this Sausage Potato Breakfast Bowl:
3-4 large red potatoes (or any potato you want really)
1 cup of diced bell peppers
1/2 cup diced onions
4-6 sausage links (I used these but you can really use whatever you want!)
Salt and pepper to taste
2 tbsp olive oil (or whatever cooking oil you like such as coconut or avocado)
Heat olive oil in a pan and add onions and peppers. Cut sausage into pieces and add to cooked vegetables. Put potatoes in microwave until soft. Once cooked add to pan with veggies and sausage. Add salt and pepper to taste.
This is a solid base for your breakfast bowl, then you can really add anything you want. My favorites? Fried eggs and Trader Joe's Pesto. Other options could be your favorite salsa or hot sauce and some avocado. Need more veggies? Add some sautéed spinach or kale, or some roasted broccoli.
This will become a weekly staple in your meal prep. Its delicious, healthy and so easy to make!
