Gingerbread Collagen Energy Bites

It's that time of year where sweets are abundant and you want something that tastes like the holidays. I love this recipe because its just sweet enough and tastes like Christmas morning, with some added gut healing collagen protein, who could ask for more? 

In our house we love sweets, but we try to limit them to special occasions. I like making "energy bites" with my 3 year old because I feel good about her licking the bowl clean when we are done, plus these healthy "treats" are great for after school snack or dessert. Heck, you could even eat them for breakfast if you wanted. 

Here's what you need: 

1 cup rolled oats 

3/4 cup almond butter 

1/2 cup finely shredded coconut

1/2 cup ground flaxseed 

1 scoop grass fed collagen 

1/4 cup maple syrup

1 tsp cinnamon

1/2 tsp ginger 

1/4 tsp ground cloves 

1/4 tsp sea salt 

1/2 cup mini chocolate chips 

Mix all ingredients together in a bowl. Once ingredients are mixed start forming into 1 inch balls. 

Store in the fridge for up to 2 weeks or in the freezer for up to 3 months.
